Charred Corn & Kale Salad with Bacon

Recipe

This is an easy and fast way to make a tasty salad that you just can’t get enough of. This bowl is full of flavours and looks amazing almost like it was bought from a café.

Ingredients

1 corn cob, husk and silk removed

5oz (150g) of bacon

2 kale leaves shredded

2⁄3 cup (120g) pre-cooked quinoa

1 tbs lime juice

1 tsp lime zest

1 tbs of finely grated parmesan

Salt and pepper to taste

 

Preparation

  1. Pre heat a non-stick pan to medium heat
  2. Add corn and bacon and cook until slightly charred for about 5-6 minutes. No oil is needed as the bacon fat would render out
  3. Meanwhile, submerge kale in boiling water. Drain in a colander after 5 minutes
  4. Toss the kale and pre-cooked quinoa in the lime juice and zest
  5. Add in the cooked corn and bacon and toss, seasoning with salt and pepper being mindful that bacon is already salty
  6. Top with parmesan.

 

PS. You can also add coriander if you like
